What does our culinary skill say? Or, what do others say about it?

Of our restaurants Boccaccio and Aquarello, we are particularly proud. Since it is not right for us however to praise ourselves, we gladly let others do that for us. Here is a quotation from guide-bleu.ch, a renowned Swiss catering trade leader:
